Christmas is right around the corner, and kitchen lovers around the world are all whipping up their favorite holiday recipes. One of my favorite recipes for this season is a delicious puerto rican drink known as “Coquito”. Some would say that this is similar to Eggnog.
Ah, but don’t forget this is a vegan blog. So of course you will be enjoying the vegan version of this popular Island drink.
Without further ado, here’s my recipe for one of my favorite puerto rican Christmas traditions.
Ingredients:
- 1 Can Coconut Milk
- 1 Can Cream of Coconut
- 2 Cups Vanilla-Flavored Almond Milk
- 2 Cups Coconut Rum (I use Bacardi, it’s vegan.)
- 1 Tsp Cinnamon
Preparation: Mix all ingredients in a blender. Refrigerate. Serve chilled.
Tip: When serving, you may sprinkle a little extra cinnamon or nutmeg on top.
